Kenny’s Meatloaf

I think every family has their own family meatloaf recipe. This recipe just happens to be my husband’s recipe. He came up with it when his kids were younger as a way to feed the kids on his weekends while also saving some money as a single dad. He likes to serve it with shells and cheese and green beans.

Ingredients:

1 pound ground beef

2 beaten eggs

1/3 or ¼ cup milk

1 pkt. onion soup mix

1 pkg. saltine crackers (crushed)

Ketchup, salt & pepper

Directions:

Mix hamburger with milk, eggs.

Add onion soup mix. Also, add salt and pepper to taste and mix together really well.

Add about ¼ cup ketchup and mix again.

Add crushed crackers a little at a time until mixture sticks together good.

Make a loaf. Spray the pan, and place the loaf into the pan with a little water in the bottom.

Cover the top of the loaf with ketchup. (Can also add the ketchup on top later, if preferred

Cook at 350º for 45 minutes.

To check it cut into the middle, cook longer if needed.
